Harvest: The grapes come from vineyards that are 60 to 100 years old. We are in Acquetico, a small fraction of Pieve di Teco. The vineyards are located at 500 m asl, where the sun and mild sea winds make the grapes mature in a more alpine than agricultural scenery. Precisely because of these climatic conditions, very few treatments are done. Espalier breeding, short pruning, we do not use herbicides and chemical fertilizers, manual harvest at the end of October.
Vinification: Vinification with cryomaceration and long batonnage before bottling. Short wooden passage.
Aging: In steel for 8/10 months
Tasting: Bright and lively straw yellow. The nose is dense and clean fruity scents of white pulp, exotic fruit and lime followed by wildflowers, elicriso, broom and pleasant notes of aromatic herbs: sage, thyme and savory. A mineral vein closes the olfactory baggage. In the mouth it is dry, fresh but with an evident sapid note that accompanies an almond finish.
Combination: Produced with the best Pigato grapes, it owes its rich patrimony of fragrances to the important thermal excursion of the territory. A wine capable of enhancing the first dishes of sea and baked fish, but also stuffed vegetables and typical Ligurian vegetable pies. I enjoyed it with trofie al pesto with potatoes and green beans.
Serving temperature: 8 - 10 C degrees
Conservation: The satisfying and winning sip will last for years giving us the nose more advanced, resinous, iodine and acacia honey notes.
